Born thanks to the genius of one of the greatest Italian agronomists, who named it after Senator Raffaele Cappelli, this type of hard and generous wheat is a combination of authentic flavors of the last century, refined by the sun of the Murgia region. In combination with the purest spring water from the Dolomites, aromatic pastas are born with a strong, typical Italian temperament.
When raw, their flavor is reminiscent of jute and licorice root. When cooked, they smell of fresh farm milk, mashed potatoes and roasted chestnuts. They have a nice buttery crumb flavor with a fine sea salt finish.
